Begge er laga av sau, eller \u00ab<strong>f\u00e5r<\/strong>\u00bb og \u00absmale\u00bb som er andre ord som betyr <strong>sau<\/strong>. Likevel er de ganske annerledes. Vi begynner med f\u00e5rik\u00e5l.<\/p>\n\n\n\n<p>F\u00e5rik\u00e5l best\u00e5r av tre ord: \u00abF\u00e5r\u00bb, \u00abi\u00bb og \u00ab<strong>k\u00e5l<\/strong>\u00bb. Det betyr <strong>rett og slett<\/strong> sau i k\u00e5l. For \u00e5 lage f\u00e5rik\u00e5l tar man <strong>sauekj\u00f8tt<\/strong> og <strong>koker<\/strong> det sammen med k\u00e5l. I tillegg er det viktig \u00e5 <strong>krydre<\/strong> det med masse pepper. Den h\u00f8res simpel ut, og det er den ogs\u00e5. Det tar litt tid \u00e5 koke, men ellers er det veldig lett \u00e5 lage. Det er vanlig \u00e5 ha potet ved siden av.<\/p>\n\n\n\n<p>Hvorfor snakker jeg da om denne simple retten? Vel, den er <strong>k\u00e5ra til<\/strong> Norges <strong>nasjonalrett<\/strong> av det norske folk f\u00f8rst i 1972 p\u00e5 et radioprogram og seinere ogs\u00e5 i 2014. F\u00e5rik\u00e5l har alts\u00e5 blitt k\u00e5ra to ganger til Norges nasjonalrett. Det er alts\u00e5 en veldig norsk rett. Men er den gammel? \u00c5 koke gr\u00f8nnsaker sammen med sauekj\u00f8tt er nok veldig gammel. Men selve retten f\u00e5rik\u00e5l h\u00f8rer vi f\u00f8rst om p\u00e5 1800-tallet. F\u00f8rste gang f\u00e5rik\u00e5l <strong>dukker opp i<\/strong> ei kokebok er i 1835.<\/p>\n\n\n\n<p>Det er vanlig \u00e5 spise f\u00e5rik\u00e5l p\u00e5 <strong>h\u00f8sten<\/strong>. Siste torsdag i september har blitt f\u00e5rik\u00e5ldagen. Grunnen til at man spiser f\u00e5rik\u00e5l p\u00e5 h\u00f8sten er at det er h\u00f8ysesong for <strong>slakting<\/strong> av sau og <strong>lam<\/strong>. Tradisjonelt var det bare mulig \u00e5 spise sau p\u00e5 h\u00f8sten ettersom det ikke var mulig <strong>\u00e5 fryse ned<\/strong> <strong>kj\u00f8ttet<\/strong>. N\u00e5 har vi mulighet til \u00e5 fryse det, og det er derfor mulig \u00e5 spise f\u00e5rik\u00e5l hele \u00e5ret. Likevel er det fortsatt sterke tradisjoner for \u00e5 spise f\u00e5rik\u00e5l p\u00e5 h\u00f8sten.<\/p>\n\n\n\n<p>La oss g\u00e5 over til smalahove. Smalahove best\u00e5r av ordene \u00absmala\u00bb og \u00ab<strong>hove<\/strong>\u00bb. Smala betyr sau, mens hove er dialekt for hode. Det er rett og slett en matrett som <strong>best\u00e5r av<\/strong> et helt sauehode. Det er kjent for \u00e5 v\u00e6re en av de mer <strong>groteske<\/strong> matrettene i Norge. Den kommer fra Vestlandet, men blir ogs\u00e5 spist andre steder i Norge.<\/p>\n\n\n\n<p>For \u00e5 lage smalahove m\u00e5 man f\u00f8rst brenne bort all h\u00e5ret og <strong>ullen<\/strong>. Deretter fjerner man <strong>hjernen<\/strong>. <strong>\u00d8ynene<\/strong> tar man ikke ut. S\u00e5 salter man hodet og lar det ligge i noen dager. Til slutt koker man det i et par timer til kj\u00f8ttet er klart. Ved siden er det vanlig \u00e5 ha poteter og <strong>k\u00e5lrotstappe<\/strong>. K\u00e5lrotstappe er most k\u00e5lrot.<\/p>\n\n\n\n<p>Smalahove er en viktig del av norsk mattradisjon. Det kommer fra g\u00e5rdene f\u00f8r i tida da det var viktig \u00e5 <strong>utnytte<\/strong> alle <strong>spiselige deler<\/strong> av <strong>dyret<\/strong>. Da var det viktig \u00e5 ogs\u00e5 spise hodet til sauen. I dag er det mange som \u00f8nsker \u00e5 holde denne mattradisjonen levende. De \u00f8nsker at vi fortsatt skal spise smalahove i Norge. Faktisk blir det arrangert smalahoveselskap noen steder i Norge, spesielt i november. Du kan pr\u00f8ve retten i Norge, men v\u00e6r <strong>forberedt<\/strong> p\u00e5 at det kommer til \u00e5 se litt brutalt ut.<\/p>\n\n\n\n<p>N\u00e5 har vi sett p\u00e5 to matretter som begge blir laga av sau. I Norge bruker man <strong>utmarksbeite<\/strong> for sau. Dette vil si omr\u00e5der gress som ellers ikke ville blitt utnytta. Sauene g\u00e5r fritt rundt omkring og spiser gress. Slik er det mulig \u00e5 produsere kj\u00f8tt p\u00e5 omr\u00e5der som ellers ikke ville blitt utnytta. Denne m\u00e5ten \u00e5 ha sauer p\u00e5 er spesiell for Norge. Dette gj\u00f8r at man produserer lammekj\u00f8tt i verdensklasse i Norge. Kanskje er det ikke s\u00e5 rart at to <strong>kjente og kj\u00e6re<\/strong> norske matretter er laga med sauekj\u00f8tt.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">F\u00e5rik\u00e5l and smalahove<\/h1>\n\n\n\n<p>F\u00e5rik\u00e5l and Smalahove are two very traditional dishes made of sheep. Both names use words for sheep in Norwegian like \u201cf\u00e5r\u201d and \u201csmale\u201d. Let\u2019s start by looking at F\u00e5rik\u00e5l.<\/p>\n\n\n\n<p>F\u00e5rik\u00e5l consists of three Norwegian words meaning \u201csheep in cabbage\u201d. To make it, you simply put some mutton with cabbage and boil them together. It is also important to season it with a lot of pepper. It sounds simple, and it is as well. It takes some time to boil, but other than that, nothing too hard. Many have potatoes to it when serving it.<\/p>\n\n\n\n<p>But why have I made an episode on this dish? Well, it was named the official dish of Norway by Norwegians in a radio show in 1972. This was repeated in 2014. So, it has been named our national dish two times, and is regarded as the quintessential Norwegian dish. How old is it? To boil mutton with vegetables is probably a very old tradition, but the first mention of F\u00e5rik\u00e5l is from a cookbook from 1835. However, it is reasonable to assume that the dish is much older than that.<\/p>\n\n\n\n<p>Traditionally, F\u00e5rik\u00e5l is eaten in autumn. In fact, the last Thursday of September is the official \u201cF\u00e5rik\u00e5l day\u201d in Norway. Autumn is the season for slaughtering the sheep and is therefore the traditional season of mutton. However, with modern freezing techniques, it is possible to conserve the meat so that you can eat the dish all year along. Nonetheless, most Norwegians tend to eat it in autumn.<\/p>\n\n\n\n<p>Let\u2019s move on to Smalahove. The name consists of two words meaning \u201csheep\u201d and \u201chead\u201d. It consists of a sheep\u2019s head and might be one of the most grotesque Norwegian dishes. It comes from the western part of the country, but is also eaten in other parts of the country.<\/p>\n\n\n\n<p>To make it, you first have to burn away the wool and hair from the head. Then remove the brain, but not the eyes. The eyes is an important part of the dish. Next, salt and season the head and put it away for a couple of days. Then cook it for a couple of hours until the meat is ready. It is usually served with potatoes or mashed rutabaga.<\/p>\n\n\n\n<p>Smalahove is an important part of Norwegian food tradition. The dish originates from a time when poor farmers wanted to use all the parts of the animal. Today, many people want to preserve the dish, and some people arrange Smalahove parties to celebrate the dish. You can try the dish if you come to Norway, but be prepared for quite a grotesque sight. &nbsp;<\/p>\n\n\n\n<p>Now, we have looked at two dishes made of sheep. In Norway, sheep graze in places that would otherwise not be used for pasture or farming. They often go around in wild nature and eat grass. This makes the Norwegian mutton really good.
