There are about 40,000 to 60,000 Sami in Norway and 100,000 in the world. The majority of the Sami people live in Norway and Sweden. The Sami language is very different to Norwegian, and it is not even an Indo-European language. In this episode, we will talk about Sami food.&lt;\\\/p&gt;\\n&lt;p&gt;Reindeer meat is very important to Sami food as it has a special place in Sami culture. The Sami people are very known for reindeer herding, although not all Sami are reindeer herders, of course. Reindeer herders look after their herds and make sure that they find suitable pastures. They mostly eat grass and heather.&lt;\\\/p&gt;\\n&lt;p&gt;The Sami people have traditionally lived in close contact with the nature around them, and this is evident in their food culture. Hunting and fishing have been important elements in Sami food. Moreover, the Sami people had to adapt their food to the season and to which food items were available at the time. They also had to create methods for food preservation such as salting and drying the meat, seeing that there was no safe way of storing fresh meat before modern freezing techniques. A very peculiar Sami dish is la\\u014basguolli which is fish that has been fermented in the stomach of a sheep.&lt;\\\/p&gt;\\n&lt;p&gt;But reindeer meat is by far the most important ingredient in traditional Sami food. The most famous dish is called bidos and consists of reindeer meat, potatoes, vegetables and meat broth. It is often served in Sami weddings and on important holidays. It is quite old and has been developed and changed during the centuries. For instance, it has not always been made with potatoes. Before potatoes were popularized in Norway in the latter part of the 18th century, it was usually served with bread. This is still possible today. Although it is considered to be the quintessential Sami dish, it is not really that unique. It is very similar to other Norwegian meat broths. Now, let\u2019s talk about traditional Sami food!<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">Samisk matkultur<\/h1>\n\n\n\n<p>Samene er et <strong>urfolk<\/strong> i Norge. De bodde tradisjonelt i Nord-Norge og Tr\u00f8ndelag. Det er 40,000 til 60,000 samer i Norge og ca. 100,000 totalt i verden. De aller fleste samene bor i Norge og i Sverige. Samisk spr\u00e5k er veldig forskjellig fra norsk, og samisk kultur har ogs\u00e5 <strong>skilt seg ut<\/strong>. I denne episoden skal vi snakke om tradisjonell samisk mat.<\/p>\n\n\n\n<p><strong>Reinsdyrkj\u00f8tt<\/strong> er helt sentralt for samisk matkultur. Reinsdyr har v\u00e6rt og er viktige for mange samer. \u00c5 drive med reinsdyr vil si at man har store <strong>reinsdyrflokker<\/strong> som man <strong>passer p\u00e5<\/strong> og finner <strong>beite<\/strong> til. Beite er steder de kan spise gress og <strong>lyng<\/strong>. Reinsdyr er derfor en viktig del av tradisjonell samisk mat.<\/p>\n\n\n\n<p>Tradisjonell samisk mat viser et folk som har v\u00e6rt i n\u00e6r kontakt med naturen. <strong>Jakt<\/strong> og fiske var en viktig del av tradisjonell samisk mat. I tillegg m\u00e5tte man selvsagt <strong>tilpasse<\/strong> seg valg av r\u00e5varer til <strong>\u00e5rstida<\/strong>. Det var ogs\u00e5 viktig \u00e5 ta vare p\u00e5 maten slik at den ikke skulle <strong>r\u00e5tne<\/strong> f\u00f8r man hadde kj\u00f8leskap og frysere. Da kunne man <strong>t\u00f8rke<\/strong> og saltet kj\u00f8ttet slik at det skulle holde lenger. En karakteristisk samisk fiskerett er la\u014basguolli. Det er fisk som blir <strong>gj\u00e6ra<\/strong> i <strong>magesekken<\/strong> til en sau.<\/p>\n\n\n\n<p>Men det er alts\u00e5 reinsdyrkj\u00f8tt som er det viktigste og mest <strong>s\u00e6regne<\/strong> med samisk matkultur. S\u00e6regent betyr noe som er spesielt for noe. Den mest kjente samiske matretten heter bidos og best\u00e5r av reinsdyrkj\u00f8tt, poteter, gr\u00f8nnsaker og <strong>kj\u00f8ttkraft<\/strong>. Det er samefolkets festmat og man spiser det gjerne i <strong>brylluper<\/strong> og p\u00e5 festdager.<\/p>\n\n\n\n<p>&nbsp;Bidos er en veldig gammel matrett, men den har ikke alltid v\u00e6rt slik den er i dag. Potet og gulrot er vanlige \u00e5 ha i bidos i dag, men det var de ikke for lenge siden. F\u00f8r poteten blei vanlig i Norge p\u00e5 1700-tallet brukte man ikke potet i bidos. Det er mulig \u00e5 serve bidos med br\u00f8d i stedet for potet slik som man gjorde f\u00f8r.<\/p>\n\n\n\n<p>Bidos er ikke s\u00e5 veldig forskjellig fra norske kj\u00f8ttretter og sodd. Sodd er en rett laga med kj\u00f8ttkraft og med kj\u00f8tt fra elg eller storfe. Det er vanlig \u00e5 <strong>servere<\/strong> sodd med poteter og gulr\u00f8tter. Sodd kommer fra Tr\u00f8ndelag og <strong>ligner<\/strong> veldig mye <strong>p\u00e5<\/strong> bidos. Den st\u00f8rste forskjellen er at bidos lages med reinsdyrkj\u00f8tt.<\/p>\n\n\n\n<p>Til slutt skal vi snakke om den norske <strong>hermetikk<\/strong>varen VILTi som f\u00f8r heta joikakaker. Det er Norges mest solgte middagshermetikk, alts\u00e5 middag som er laga p\u00e5 hermetikk. Retten best\u00e5r av 50% saus og 50% <strong>kj\u00f8ttkaker<\/strong> av reinsdyr, <strong>storfe<\/strong> og sau. Det er ikke en samisk matrett, men har tradisjonelt <strong>markedsf\u00f8rt<\/strong> seg som om det skulle v\u00e6rt det. F\u00f8r var det en samisk gutt med samekl\u00e6r p\u00e5 boksen. I fjor i 2020 blei joikakaker kritisert for kulturell appropriasjon. Det vil si at man tar noe fra en kultur og setter det inn i en annen. De blei alts\u00e5 kritisert for \u00e5 <strong>misbruke<\/strong> samisk kultur. Det er grunnen til at det i 2020 bytta navn fra joikakaker til VILTi.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\">Sami Food<\/h1>\n\n\n\n<p>The Sami people is an indigenous people in Norway traditionally based in northern Norway and in certain places in Tr\u00f8ndelag. There are about 40,000 to 60,000 Sami in Norway and 100,000 in the world. The majority of the Sami people live in Norway and Sweden. The Sami language is very different to Norwegian, and it is not even an Indo-European language. In this episode, we will talk about Sami food.<\/p>\n\n\n\n<p>Reindeer meat is very important to Sami food as it has a special place in Sami culture. The Sami people are very known for reindeer herding, although not all Sami are reindeer herders, of course. Reindeer herders look after their herds and make sure that they find suitable pastures. They mostly eat grass and heather.<\/p>\n\n\n\n<p>The Sami people have traditionally lived in close contact with the nature around them, and this is evident in their food culture. Hunting and fishing have been important elements in Sami food. Moreover, the Sami people had to adapt their food to the season and to which food items were available at the time. They also had to create methods for food preservation such as salting and drying the meat, seeing that there was no safe way of storing fresh meat before modern freezing techniques. A very peculiar Sami dish is la\u014basguolli which is fish that has been fermented in the stomach of a sheep.<\/p>\n\n\n\n<p>But reindeer meat is by far the most important ingredient in traditional Sami food. The most famous dish is called bidos and consists of reindeer meat, potatoes, vegetables and meat broth. It is often served in Sami weddings and on important holidays. It is quite old and has been developed and changed during the centuries. For instance, it has not always been made with potatoes. Before potatoes were popularized in Norway in the latter part of the 18<sup>th<\/sup> century, it was usually served with bread. This is still possible today. Although it is considered to be the quintessential Sami dish, it is not really that unique. It is very similar to other Norwegian meat broths. For example, sodd, a central Norwegian dish, is made with meat broth and moose meat or beef. It is usually served with potatoes and carrots. Bidos and sodd are very similar, the most striking difference being the choice of meat as bidos is always made with reindeer meat.<\/p>\n\n\n\n<p>The last dish we shall examine is not really a dish nor is it Sami food. We shall talk about the canned food item VILTi which was previously known as joikakaker. It consists of 50% sauce and 50% meatballs of reindeer, cattle, and sheep. It has promoted itself as a Sami food item as it contains reindeer and has for a long time used a Sami boy on its cans.
